Grilled Ginger Salmon

- 1 ¼ lbs. salmon fillet
- 4 tbsp. Buckhead Gourmet Ginger Root Dressing
- ¼ cup plain yogurt
- 2 cloves garlic, finely chopped
- 2 tbsp. lime juice
- 1 tbsp. lime zest
- 1 tbsp. honey
- 1 tbsp. canola oil
- ½ tsp. salt
- ½ tsp. ground pepper

Directions: Cut salmon into 4 pieces (approx. 1 in. thick) skin on, pin bones removed. Whisk together marinade of Ginger Root Dressing, yogurt, garlic, lime juice, lime zest, honey, oil, salt and pepper in small bowl. Place salmon in dish and pour marinade over. Cover and place in refrigerator for 20-30 mins., turning once or twice. Prepare grill and oil grill rack (do not use grill pan). Place salmon, skin-side up, on grill. Cook 5 mins. Carefully turn salmon over and cook another 4-6 mins. or until opaque in center. Remove salmon from grill. Remove skin.
