Just Peachy Pork Chops

Preheat broiler. Line medium size baking dish with tin foil, lightly spray with cooking spray. Lay chops side by side and season with all ingredients except salsa. Broil using middle rack for 5-8 minutes (until edges are brown). Remove from oven and spoon salsa over each chop, wrap dish tightly with foil and turn oven to 325 degrees. Return dish to oven and bake for 45 minutes, chops should be cut with a fork tender. Serves 4.

Spinach Salad with Raspberry Vinaigrette

Chill salad plates, take all ingredients and toss. Serves 4

Great Dip Recipe

Combine cream cheese and salsa in a medium glass bowl. Put in Microwave for 2 ½ minutes. Take out of microwave and stir until mixed. Place back in microwave and heat another 2 minutes. Serve with chips. Serves 4.

Vidalia Onion Chicken

Begin to cook rice and water, turn to low heat once water boils. Clean chicken and cut into 1" squares. Add oil to skillet and cook chicken on medium heat for 4 minutes stirring occasionally. Add Creamy Vinaigrette and continue to cook for 4 minutes stirring occasionally. Serve over rice. For a thicker sauce, add 2 tblsp of half and half when vinaigrette is added to chicken. Serve with a side of steamed carrots or broccoli. Serves 4.
